Bodegas CerrĂłnâs La Servil is an organic, terroir-driven red from the high-altitude old-vine vineyards of Jumilla, primarily made from Monastrell with small amounts of Moravia Agria, Blanquilla and Rojal that add complexity and freshness. Grown on limestone-gravel soils around 900â960 m and biodynamically farmed, the grapes are hand-harvested, fermented with native yeasts and aged 12â14 months in large oak foudres and used barrels, producing a wine with vibrant dark fruit and Mediterranean herb aromatics, fresh acidity, firm yet polished tannins and a striking mineral finish. La Servil balances structure and eleganceâits bright ruby colour, nuanced spice and earthy undertones make it both immediately appealing and ageworthy, reflecting the unique character of Jumillaâs high-altitude terroir.
